A Pretty Little Christmas

Welcome to my home! I'm so excited to be participating in Heather's 'Pretty Little Christmas' Blog Party!

I didn't get as much decorating done this year as I usually do, but I had alot of fun with it because this is my first year decorating in PINK!

My tree is decorated in white and pink, and topped with a glittery snowman hat that I made. I got the idea from a Joli Paquet tutorial.

Candles are a must, especially at Christmas time. I love to sit in my livingroom at night and enjoy the tree lights and the glow of the candles.

My favorite teddy bear sits by the tree.

I collect nativities, and this is one of my favorites.

I thought I would share my all-time favorite Christmas recipe with you. When I was a child, my mother made Rosettes at Christmas-time, and now I make them for the family.

1 cup milk

1 vanilla bean, split lengthwise

3 T. sugar

1/2 teaspoon salt

1/2 teaspoon cardamom

1 1/2 cups flour

2 eggs, lightly beaten

2 qts canola oil

confectioners' sugar for sprinkling

1. Pour milk into a small bowl, and add the seeds scraped from the vanilla bean. Whisk to combine. In a medium bowl, combine sugar, salt, cardamom, and flour. Add eggs, alternating with milk. Whisk until smooth, and thick. Let stand at least 30 minutes, or refrigerate overnight.

2. Heat oil in a four-quart saucepan over medium-high heat until a deep-frying thermometer registers 375 degrees.

3. Attach rosette iron to handle. Carefully dip iron into oil for 2 to 3 minutes. Blot with paper towel. Always remember to heat rosette iron before dipping into batter.

4. Dip hot iron into batter up to the top edge; do not allow batter to coat the top.

Submerge iron in oil, and cook rosette until lightly browned. Remove iron from oil, and gently remove rosette, using a fork if necessary. If rosette pops out of the iron and falls into the oil, use tongs to retrieve it.

5. Drain rosettes on paper towels. Sprinkle with confectioners' sugar before serving.

Enjoy! I think I'm going to go get me a couple of rosettes with a cup of hot chocolate, and enjoy the lights.
